Ingredients:
- 200g Swiss brown mushrooms, quartered
- Virgin olive oil
- 2 teaspoons balsamic vinegar
- 1 firm ripe avocado, stone removed, peeled, sliced
- 1 bagel, halved
- Freshly picked flat-leaf parsley leaves, to garnish
Method:
- Preheat oven to 200C and line baking tray with baking paper
- Place mushrooms on tray, spray oil, drizzle with vinegar and top with salt and pepper
- Roast in oven for 15 minutes
- Meanwhile, toast bagels and slice avocado into thin wedges
- Serve – place a toasted bagel on each plate, top with avocado, mushrooms and parsley
Tip: Mushrooms can be pan fried in a large pan and sprayed with oil over a high heat. Stirring occasionally for about 4 minutes or till golden
